Foie gras terrine with buttery brioche and a pinch of sea salt

Soup

Goose broth (kaldoun) with vegetables, homemade noodles and a touch of cream

Recommended wine: Grüner Veltliner Federspiel Jäger, Wachau, Austria


Main dish

Roasted goose breast cooked until pink, croquette made from confit goose leg

Red cabbage purée with apples, roasted white cabbage with caraway seeds

Carlsbad dumpling, cranberry jus

Recommended wine: Beaujolais Nouveau


Dessert

Shredded pancake (Kaiserschmarrn) with vanilla ice cream and homemade whipped cream

Recommended wine: Pálava, Sonberk
